Omg I do love me a fritter or a rosti, whatever you want to call them I love making new ones from veggies that are healthy but taste like they are naughty! My latest obsession are these sweet potato rosti’s, they are literally so easy and are gluten free, dairy free and vegetarian!
Sweet potatoes are high in Vitamin A and C and are so versatile being used in desserts as well as delicious savoury meals. I am obsessed!
As well as being an amazing anti-inflammatory food, they also regulate blood sugar AND the purple and orange skinned varieties are high in antioxidants namely beta-carotene – it is said that the BC in sweet potato is more bio-avaible than in green leafy veggies ( this means our bodies absorb it more readily and easily). Soooooo are you on the SP bandwagon yet? You will be after eating these 🙂
SWEET POTATO ROSTI
Makes about 5 fritters
2 cups grated sweet potato
1 brown onion – diced
3 TBsp Buckwheat Flour
salt and pepper
Combine ALL ingredients in a bowl and mix by hand. Heat a frying pan and use coconut or olive oil, add dollops of the mixture and even out the shape with a spoon, cook until crispy and golden both sides.
Serve for breaky with poached eggs, avo, relish, spinach…..you name it …everything goes with SP!
